Ingredients

  • 2 tbsp olive oil or butter
  • 1 small onion finelly chopped
  • 2 cups cassava flour or one of the substitutions listed above
  • Salt to taste
Optional everyday additions
  • 1 egg lightly beaten
  • 2 tbsp cooked bacon finely chopped
  • Chopped parsley or green onions

Method

  1. Heat the oil or butter in a wide pan over medium heat.
  2. Add the onion and cook until soft and lightly golden.
  3. Reduce heat to medium-low and add the flour gradually, stirring constantly.
  4. Toast for 5–7 minutes, stirring, until lightly golden and fragrant.
  5. Season with salt and adjust texture with a small amount of extra fat if needed.
  6. Remove from heat once evenly toasted.

Notes

  • Always toast farofa slowly to avoid burning.
  • Add-ins should be cooked separately and folded in at the end.
  • Farofa continues to toast slightly from residual heat after cooking.
  • Neutral seasoning is intentional — farofa supports the meal, it doesn’t lead it.
