Heat the olive oil in a pot over medium heat.
Add the onion and cook until soft and translucent.
Add the garlic and cook briefly until fragrant.
Add the chicken breast and season with salt and pepper. Stir to coat.
Add the water or stock, cover, and bring to a gentle simmer.
Cook for about 15–20 minutes, until the chicken is fully cooked and tender.
Remove the chicken from the pot and shred using two forks.
Return the shredded chicken to the pot and stir to absorb any remaining liquid.
Adjust seasoning if needed and finish with fresh herbs if using.
