Brazilian Sautéed Vegetables (Everyday Mix)

A simple Brazilian-style vegetable mix, sautéed quickly and served daily with rice, beans, meats, or eggs.

Ingredients
  

  • 2 tbsp olive oil or neutral oil
  • 1 small onion sliced
  • 1 carrot sliced or julienned
  • 1 zucchini sliced
  • 1/2 red bell pepper sliced
  • Salt to taste
  • Black pepper optional

Method
 

  1. Heat the oil in a wide pan over medium-high heat.
  2. Add the onion and cook until lightly softened.
  3. Add the carrot and cook for 2–3 minutes.
  4. Add the remaining vegetables and stir well.
  5. Cook for 5–7 minutes, stirring, until vegetables are tender but still hold their shape.
  6. Season with salt and pepper and remove from heat.

Notes

  • Add firmer vegetables first and softer ones later.
  • Avoid overcrowding the pan to maintain good texture.
  • Vegetables should remain lightly crisp, not soft.
  • Vegetables can be adjusted based on availability.
