Ingredients

  • 3 cups cooked beans (black or pinto) with cooking liquid
  • 1 tbsp olive oil or neutral oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • Salt to taste
  • Black pepper optional

Method

  1. Heat the oil in a medium pan over medium heat.
  2. Add the chopped onion and sauté until soft and lightly golden.
  3. Add the garlic and cook briefly, stirring to avoid burning.
  4. Add the cooked beans and a portion of the cooking liquid.
  5. Using a fork or potato masher, gently mash the beans directly in the pan.
  6. Season with salt and black pepper.
  7. Continue cooking, stirring occasionally, until the beans reach a creamy consistency. Add more liquid if needed.
  8. Taste and adjust seasoning. Serve warm.

Notes

  • Do not blend the beans; texture should remain rustic.
  • Thickness is adjustable — add liquid gradually if it becomes too dense.
  • This base can later be enriched to become a simple tutu de feijão if desired.
  • Best cooked gently to avoid sticking or drying out.
